�oban Salatası or Shepherd's Salad
Ingredients
- 3-4 large tomatoes, seeded and diced
- 4 small cucumbers, diced (traditionally peeled but I am using unwaxed cucumbers, so I did not peel mine)
- 1 small red onion, diced
- 3/4 cup seeded and chopped pepper (I used red, yellow and orange, but traditionally green pepper is used)
- small hand full Flat leaf Parsley chopped (about 1/4 cup)
- 2 lemons (juiced)
- 1/2 cup good olive oil
- To taste Salt
Cooking Directions
- In a large bowl, combine the tomatoes, cucumbers, onion, pepper and parsley.
- Cut the lemons in half and squeeze the juice into a small bowl.
- Use a tea strainer to catch the seeds.
- Mix in the olive oil and about 1/2 to 1 tablespoon of salt depending on your taste.
- I prefer to use less and then add more salt if necessary after the flavors blend but before serving.
- Whisk the oil and lemon juice well and pour over salad.
- Mix well to make sure all the salad is covered.
- You can cover and refrigerate if you like.
- I prefer my salad at room temp so I just cover but I do not refrigerate. Afiyet olsun!
