Sweet & Sour Beef & Peppers with Rice Noodles

Beef Stew Meat

Onion

1 Cup
Sweet Bell Pepper, red, yellow and orange

2 Cups
Beef Stock

2 Tablespoons
Olive Oil

1/3 Cup
Soy Sauce

1/3 Cup
Apple Cider Vinegar

1/3 Cup
Brown Sugar

1 Teaspoon
Corn Starch

Dash
Sesame Oil
-
3-4 Cloves
Garlic, crushed

1 Pound
Rice Noodles
Cooking Directions

Slice onions and peppers and saute in olive oil.

Cut the beef stew meat into smaller pieces and add to onions and peppers. Saute the meat for 4-5 minutes and add the garlic and saute a few more minutes.

Add the beef stock and bring to a boil. Reduce heat to low, cover and cook for 45 minutes or until meat is tender.

Mix the salt, apple cider vinegar, soy sauce, and brown sugar with the corn starch.

Stir into the meat and onions and peppers.

Continue cooking while the noodles boil.

Fill a large pot with salted water and bring to a boil.

Add the noodles and boil for six minutes.

Drain the noodles and then mix with the meat, onions and peppers.

Serve immediately.
