Spinach, onions and Feta go so well together and this recipe is no exception. This would be good to serve as an appetizer at a cocktail party or for brunch. It is really light and tasty. You could serve it with soup or a salad for a light lunch. You make your own puff pastry but be prepared to take about a day to do so. I made homemade puff pastry years ago but it was too time consuming. You have to make the dough, roll it out, place cold butter in the center, fold like an envelope and then roll again. You repeat this procedure several times. Placing it in the freezer for 30 minutes each time. I personally do not have the time to do that anymore but it really does taste better if you have the time to make it yourself. Either way you decide, it will be delicious, just remember to bake it with love!
