Well, it is cold and raining here in Alabama so what better time for Sulu Kofte than now, right?  Sulu Kofte is one of those foods that can make your mouth water just thinking about it.  It is super easy to make and it tastes even better the second day - if you have any left, that is.   Click here for recipe!





Sulu Kofte - Meatball Soup After!:-)


Sulu Kofte or Meatball Soup

Ingredients

Cooking Directions

  1. In a large bowl combine onion, egg, about 1 Tablespoon Salt and parsley and stir well.
  2. Add in the ground beef and rice and mix well.
  3. Shape the meatballs about the size of a small walnut.
  4. Place on a lightly floured tray.
  5. Wash, peel and chop your potatoes.
  6. Peel and chop your onion.
  7. Heat 2 Tablespoons Olive Oil and saute the onion until translucent.
  8. Next add half your meatballs to the pan.
  9. Lightly brown the meatballs and then carefully remove to a platter.
  10. Brown the other half in the same manner and remove to the platter. Saute the potatoes for just a minute or two.
  11. Mix the 2 Tablespoons tomato paste with 2 cups of hot water and add to the potatoes.
  12. Gently add the meatballs back to the pan and add the tomato sauce with 2 cups more of water.
  13. Once boiling reduce heat to medium heat and taste the broth for seasoning.
  14. Add salt and pepper to taste.
  15. Simmer for 20 - 25 minutes until meatballs and potatoes are tender.
  16. Serve with a nice bread and a big squeeze of lemon juice. Afiyet Olsun!
