Perfect Rice Every Time

I have been cooking perfect rice for over 20 years and I must give credit where it is due.  Sevim Ozbilgin, who was my mother-in-law at the time, taught me how to make perfect rice.  It is always fluffy and delicious every time.  I am giving you the recipe below for plain rice but you can take this simple technique and make countless versions.  I will give you some ideas for variations in upcoming posts.

Sevim's Perfect Rice
Ingredients:

1 Tablespoon cooking oil
1 cup jasmine rice, washed & rinsed
1/4 Teaspoon salt
2 cups hot water

Pour the cooking oil in the pan and pour in rice and salt. Toast the rice, stirring occasionally for 2 minutes. Add the hot water, stir again and bring to a boil. Once boiling, reduce the heat to medium and put your lid on. Set your kitchen timer for 20 minutes. Do NOT OPEN the lid!!!!!!! When your timer goes off turn off the heat, if you are using an electric burner, move your pan to a heat proof surface. Let the rice rest for a couple of minutes then fluff with a fork and serve! Yummmmy!!!!
***You can double the recipe by doubling all the ingredients except the cooking oil. You can also use meat stock or broth in place of the water.***
